BBQ Fries of Potato Wedges

Wat geef je als bijgerecht? Meestal gaat men voor de klassieke aardappelsalade, aardappel in de schil met lookboter of gewoon wat brood. We zouden geen barbecue-adepten zijn mochten we een mooi alternatief hebben (op zijn Belgisch): BBQ fries of ook genaamd potato wedges. Kleine aardappeltjes overgoten met bbqsaus op de grill. Weinig werk en super lekker. Je kan dit gerecht geven als een hapje of als bijgerecht.

Op zoek naar andere aardappel recpeten, dan zijn deze zeker iets voor jou Vulcano potato, Aardappelbom, Gestoofde aardappelbokjes met gesmolten kaas, Baked potato, Aardappelen in zoutkorst, Potato wedges met Braairub nr 4, Smashed potatoes, Aardappel met Spek, Twice-baked sweet potato of de immer bekende Hasselback Potatoes.

Benodigdheden 4 personen:

  • twee handenvol krielaardappelen
  • peper en zout
  • 4 eetlepels olijfolie
  • 1 eetlepel paprikapoeder
  • 1 koffielepel komijnzaad
  • 4 eetlepels van je favoriete barbecuesaus
  • 1 aluminiumplateau of -schaal

Bereidingswijze:

  1. Was aardappelen en kook ongeveer 20 minuten of tot  ze bijna gaar zijn.logo directe zone
  2. Snijd de aardappelen in 4 stukken in de lengte door en doe deze in een diepe kom.
  3. Strooi er de peper, zout, paprikapoeder, komijnzaad en de barbecuesaus overheen en meng alles goed.
  4. Plaats een aluminiumplateau op de grill boven de kolen en giet er de aardappelen op.
  5. Bak de aardappelen op een matig vuur tot ze gaar zijn en de saus gecarameliseerd is. Roer regelmatig om.

Tip: indien de aardappelen groot genoeg zijn kan je ze ook rechtstreeks bakken op de grill.
Ben je niet gek van de barbecuesaus dan kan je deze vervangen door provençaalse kruiden, rozemarijn… maw pas zoveel mogelijk aan naar jouw smaak en laat ons gerust weten wat je gasten ervan vonden.

These lamb chops were seared in a cast iron pan on the charcoal BBQ, and the result is exactly what you want:
a deep, golden-brown crust packed with flavor.

Cast iron + blazing hot charcoal = pure magic.

The pan holds the heat, the fat renders beautifully, and the lamb develops that intense caramelized crust while staying juicy inside.

Simple technique:
🔥 Preheat the cast iron pan until it’s smoking hot
🧂 Season lamb chops with salt & pepper
🥩 Sear hard for about 2–3 minutes per side
🧈 Finish with butter, garlic and herbs in the pan

The smell alone will make everyone gather around the BBQ.

Juicy chicken breast filled with pesto, grilled until smoky and perfectly tender.
Simple ingredients, big flavor.

How to make it 👇

Ingredients
	•	2 chicken breasts
	•	2–3 tbsp green pesto
	•	30 g grated parmesan
	•	Salt & pepper
	•	Olive oil
	•	Toothpicks or skewers

Preparation

1️⃣ Butterfly the chicken
Slice the chicken breast horizontally so it opens like a book. Don’t cut all the way through.

2️⃣ Fill it
Spread pesto inside the chicken and sprinkle with parmesan.

3️⃣ Close it
Fold the chicken back together and secure with toothpicks.

4️⃣ Season
Rub the outside with olive oil, salt and pepper.

5️⃣ Grill
Cook on the BBQ over medium heat (180–200°C) for about 12–15 minutes, turning occasionally until the internal temp reaches 72°C.

6️⃣ Rest & slice
Let it rest for a few minutes, then slice to reveal that pesto-filled center.

Juicy chicken, melted pesto, smoky BBQ flavor.
