De BBQ Bibliotheekkast

Als gezelligheidsmens lees ik graag boeken. Een bibliotheek in de woonkamer vind ik absoluut onmisbaar. Daarin stop ik dan ook de meest courante zaken die tot inspiratie kunnen leiden. Kookboeken en Gin :).
Hieronder som ik de (BBQ) kookboeken op die in mijn bibliotheek staan. Gaande van pure BBQ boeken naar klassiekere kookboeken tot kooktechnieken, de basis.
Daarnaast zie je al dan niet een “*” staan naast het boek. Dit “sterretje” geeft aan of dit boek de moeite is om te kopen. Persoonlijk vind ik deze boeken met een “sterretje” een must have in de BBQ bibliotheek. To be honest, this was the first flank steak I ever made. Yes indeed, shame on me.⁣
⁣
But.... this won't be the last time. This cut of steak is to tender and tasty. It is even a thin cut, which makes it fast to grill.⁣

And from this piece you can easily feed 3 people.⁣
Next time I will be experimenting with some rubs and flavors.⁣

A couple of weeks ago I did a pulled boar session, and man, it was guuuuuuuud. 🤤⁣
⁣
Because the boar 🐗 meat is lean, I injected 💉 it to make sure it would keep moist during the cook. For the rest I used the normal procedure as for pulled pork.⁣
⁣
And I can tell you, the taste is different and I loved it.⁣
This won't be the last (pulled) boar I make 😍.⁣

🥩 Simmentaler Steak 🥩 ⁣ ⁣ When @inkbird_ 🥩 Simmentaler Steak 🥩 ⁣

When @inkbird_netherlands asked me to test the new and fast IHT-1S 🌡I was looking for a quick test dish.⁣
⁣
Well, steak 🥩  was of course my first choice. A fast and delicious way to test this thermometer🌡.⁣
⁣
Within 2 seconds it reads the temp and so, easy for me to follow the doneness. I took off the steak at 50°C and let it rest for about 5 minutes. 🥩🌡⁣
⁣
This steak was rubbed with the Naked Gun Powder of @norubbish.nl. A rub containing smoked pepper garlic and carbon for that incredible black look.⁣

Yes!!! I had the chance of testing the new IHT-1S from @inkbird_netherlands and I can tell you: it is 𝗚𝗥𝗘𝗔𝗧! 

This super fast thermometer reads the temp in about 2 seconds, has a rotatable screen and blacklight.  And, very important, it is washable and thus water resistant.. I've been testing it a couple of days now, and I can say that this is my new go to insta read thermometer from now on!

Well, my second go to recipe with brisket is a burger. Plain and simple. I warm the meat sous vide in it own juices, so It won't become dry. This gives me always me a great result.⁣

A great steak, like Rubia Gallega,  just needs a bit of rub and great grill marks,⁣

This @fireflybbq Dallas Lone star rub is a great beer rub. Used for brisket but definitely also for steak.⁣
⁣
To get great grill marks, I used Grill Grates for a fenomenal result. The grills just gave a nice sweet taste, thanks to the Maillard reaction. And this is the result you want.⁣

I've seen a lot of turkey breast recipes, but this one stood out. This low & slow turkey breast Texas Style is done with a beef rub. Just like you would cook a brisket. ⁣

Like Matt from @meatchurch , I regularly basted the turkey with melted butter. It adds to the flavor and juiciness.⁣
⁣
Just keep an eye on the internal temp of 160°f (71°c) to maintain the tenderness and juiciness of the meat.⁣

This Wagyu steak is by far a steak the best steak I ever had. It was tender, juicy and full of flavor.⁣
⁣
Because of the high fat rate in the meat I seared this steak in a iron skillet. This way the fat of the steak melts and can be re-used to sear in the skilled. Searing the meat in its own fat, increases the flavor.⁣
⁣
So, in my opinion a iron skillet is the way to go to prepare a Wagyu steak.⁣

The holidays are over, and we are still enjoying the good times and dishes we had. 🤩🍽⁣

Particularly this grilled Peppercoated deer 🦌 steak I loved the most. Just crushed some black and pink peppers and sea salt and coated the steak with them.⁣
⁣
Grilled this Deersteak till 52°C and let it rest for a couple of minutes. Also grilled some potatoes 🥔 and vegetables 🥕 for this dish as a healthy site 🤪.⁣
