Twice Baked Sweet Potatoes

De winter zorgt er altijd weer voor dat ik zin krijg in zoete aardappel. Een hartig warm gevoel krijg ik daarvan :-)! Maak het helemaal winters door er wat spek aan toe te voegen.

Op zoek naar andere aardappel recpeten, dan zijn deze zeker iets voor jou Vulcano potato, Aardappelbom, Gestoofde aardappelbokjes met gesmolten kaas, Baked potato, Aardappelen in zoutkorst, Potato wedges met Braairub nr 4, Smashed potatoes, Aardappel met Spek, Twice-baked sweet potato, Potato Wedges of de immer bekende Hasselback Potatoes.

Benodigdheden voor 4 personen:

  • 2 grote zoete aardappelen
  • 50 gr spekblokjes
  • 1 eetlepel olijfolie
  • 50ml melk
  • zout en peper
  • 120 gr geraspte kaas (voorkeur: mengeling van cheddar en mozzarella)
  • 1 eetlepel fijngesneden bieslook

Setup van de BBQ:logo indirecte zone

  • Maak de barbecue klaar om indirect te grillen op medium hoge temperatuur van 220°C

Bereidingswijze:

  1. Was en doorprik de aardappelen enkele keren met een vork en bak ze indirect voor 30-50 min. of tot ze zacht zijn.
  2. Laat ze daarna lichtjes afkoelen en snijd ze in de lengte door.
  3. Lepel de aardappel uit in een kom en voeg er melk, peper en zou aan toe. Meng goed zodat alles lekker smeuïg is.
  4. Vul de aardappelschil terug met het mengsel en werk af met de spekblokjes, de kaas en de bieslook.
  5. Bak nu de aardappel op zo’n 180°C voor 15 à 20 minuten.
  6. Serveer warm!
  7. Smakelijk!
