Horta BBQ-dag ism Weber: Thaise Balletjes à la Peter De Clercq

Op 26/5 organiseerde Horta zijn jaarlijkse Horta BBQ-dag. Opnieuw was dit in samenwerking met Weber. Dit jaar werd opnieuw gekozen om te werken met een menu van Peter Declercq die hij speciaal voor die dag ontwikkeld had.
De planning van die dag zag er als volgt uit: menu demonstratie van 10u00 tot 13u30 en van 13u30 tot 16u00. In tijd diende we dus het volledige menu van 4 gerechten klaar te maken op de Weber Genesis II gasbarbecue.
De klanten konden zo meevoerend hoe we de gerechten klaarmaakten maar ook hoe we alles praktisch grillen op de BBQ. Tevens werd er ook ter promo Cornet bier geschonken om alles weg te spoelen.

Ander Horta gerechtje kan je hier vinden: Wrap met varkensvlees, Licht gerookte rundsfilet, Kabeljauwhaasje op een bedje van laurier.

Benodigdheden:

  • 500 gr gemend gehakt
  • 400 ml kokosmelk
  • 2 fijngeneden lente-uitjes
  • 1 rode chilipeper
  • 100 gr gesnipperde rode ui
  • 10 gr geraspte gember
  • limoensap
  • 2 eetlepels gehakte basilicum en koriander
  • 20 gr rietsuiker
  • 3 limoenblaadjes
  • handvol wijnvatsnippers

Setup van de BBQ:Directe zone Grillen BBQ

  • Maak de barbecue klaar om direct te garen om medium warmte van 180° – 220°C.

Bereidingswijze:

  1. Maak balletjes van 2 cm diameter, wrijf ze in met olijfolie en kruid ze.
  2. Grill de balletjes en gooi wat wijnvatsnippers op de kolen om een extra rooktoets toe te voegen.
  3. Zet ondertussen de kokosmelk op het vuur en laat deze even opkoken.
  4. Voeg de lente-uitjes, chilipoeder, rode ui en gember toe aan de kokosmelk. Werk af met limoensap, verse basilicum en koriander en suiker.
  5. Serveer de balletjes in de saus.
  6. Smakelijk!
