Gerookte Boudin met Carolina Mustard en Sweet pickles

Een Haute Dog met eenAmerikaanse BBQ twist. Dat kunnen we zeggen van dit recept.
We gaan namelijk de worst roken en daarna afwerken met echte Carolina Mustard Sauce en Sweet pickle relish.  Het kan niet Amerikaanser :).
Het recept van de Caroline Mustard Sauce haalde ik bij Big Bob Gibson uit zijn boek ‘Big Bob Gibson’s BBQ Book‘. Chris Lilly, Barbecue Hall of Famer, won verschillende keren de Memphis in May competitie waar 230 teams strijden om de titel van ” World Champion” van de VS ;). Een grote meneer uit de BBQ wereld dus kan je wel zeggen.
Zelf runt hij enkele BBQ restaurants, Big Bob Gibson, die zeker de moeite waard zijn om eens te bezoeken. Ze geven ze je zelfs graag een rondleiding waar de pits zijn.

Benodigdheden voor 2 personen:

  • 2 Monsieur Boudin Toni worsten
  • 1/2 tomaat
  • enkele slablaadjes
  • 2 broodjes of picolo’s
  • appel houtsnippers
  • Zoete pickle relish
  • Voor de Carolina Mustard sauce
    • 175 ml mosterd
    • 120 ml honing
    • 60 ml appel azijn
    • 2 eetlepels Ketchup
    • 1 eetlepel bruine suiker
    • 2 theelepels Worcestershire saus
    • 1 theelepel Tabasco

Setup van de BBQ:

  • Maak de barbecue of Yakiniku Grill klaar om indirect te grillen op medium temperatuur van 140°C

Bereidingswijze:

  1. Maak de Carolina Mustard saus door alle ingrediënten te mengen in een diepe kom en deze 24u te laten koelen in de ijskast.
  2. Rook de worsten indirect met appel houtsnippers voor zo’n 30 minuten.
  3. Snij de tomaat in blokjes.
  4. Bak daarna de worsten nog kort af direct boven de kolen tot ze goudbruin zien en een kerntemperatuur van 70 °C hebben.
  5. Snij het broodje open, wrijf de binnenkant wat in met olijfolie en bak deze kort aan direct boven de kolen. Bak daarna nog even de buitenkant van het broodje, eveneens direct boven de kolen.
  6. Leg wat sla op de onderkant van het broodje, leg de worst op de sla, overgiet met een eetlepel Carolina Mustard sauce, tomaat en zoete pickle relish.
  7. Smakelijk!

Pizza Margherita on a Gas Barbecue (Recipe)
You’ll need:
For the dough:
• 500 g pizza flour (00 flour)
• 325 ml warm water
• 10 g salt
• 3 g dry yeast

Toppings:
• 200 g of your finest tomato sauce
• Fresh mozzarella
• Fresh basil
• Olive oil
• Salt

How to make it:
1️⃣ Make the dough: Mix flour, water, yeast and salt. Knead until smooth and let rise for 1–2 hours. Divide into dough balls and let them rest for another 30 minutes.
2️⃣ Preheat the barbecue: Place your pizza stone on the grill and preheat your gas barbecue to 300–350°C with the lid closed for at least 20–30 minutes.
3️⃣ Stretch the dough: Stretch into a thin round base.
4️⃣ Top lightly: Add tomato sauce, mozzarella and a drizzle of olive oil. Don’t overload it.
5️⃣ Bake: Slide onto the hot pizza stone and bake for 4–6 minutes, rotating if needed.
6️⃣ Finish: Add fresh basil after baking and serve immediately.

Simple ingredients, big flavor. Baby potatoes sizzling over open fire with butter, fresh herbs and crispy golden edges — the ultimate BBQ side dish.

Open Fire Baby Potatoes (Recipe)

You’ll need:

* 1 kg baby potatoes
* 3 tbsp olive oil or melted butter
* 3 cloves garlic, minced
* Fresh rosemary & thyme
* Salt & black pepper
* Optional: grated parmesan or chili flakes

How to make it:
1️⃣ Parboil the baby potatoes for 10–12 minutes until just tender. Drain well.
2️⃣ Heat a hot plate or skillet over open fire.
3️⃣ Toss the potatoes with oil, garlic, herbs, salt and pepper.
4️⃣ Grill them over the fire for 15–20 minutes, turning regularly until crispy and golden.
5️⃣ Finish with extra fresh herbs, parmesan or chili flakes.

MOINK BALLS (BBQ Recipe)

You’ll need:

* 500 g ground beef
* 1 egg
* 40 g breadcrumbs
* 2 tbsp BBQ rub sweet rub by @barbecoa_by_tom_bertels 
* 12 slices bacon
* 150 ml BBQ sauce by @barbecoa_by_tom_bertels 

How to make them:
1️⃣ Mix: Combine ground beef, egg, breadcrumbs and BBQ rub. Form into golf ball-sized meatballs.
2️⃣ Wrap: Wrap each meatball with a slice of bacon and secure with a toothpick.
3️⃣ BBQ Setup: Prepare your BBQ for indirect heat at 110–120°C and add a chunk of smoking wood (apple or cherry).
4️⃣ Smoke: Place the moink balls on the grill and smoke for 60–75 minutes.
5️⃣ Glaze: Brush with BBQ sauce and cook another 15–20 minutes until sticky and caramelized (internal temp ±72°C).

🔥 Juicy inside, crispy bacon outside, glazed to perfection.

Ingredients

* Thick-cut pork belly slices
* Salt & pepper or your favorite BBQ rub
* Optional: honey or mustard glaze

Method

1. Preheat BBQ to medium indirect heat.
2. Season generously.
3. Grill indirect for 15–20 min to render the fat.
4. Move to direct heat and grill until crispy on both sides.
5. Optional: glaze lightly and let it caramelize.
6. Rest briefly… then slice or serve whole.

Crispy outside. Juicy inside.

Caramelized apples, buttery pastry, cooked over fire…
Tarte Tatin on the BBQ is pure magic. Sweet, smoky, and just a little bit rebellious.

🍎 BBQ Tarte Tatin (Cast Iron Method)

Ingredients
	•	4–5 apples (Elstar or Granny Smith), peeled & halved
	•	100 g sugar
	•	50 g butter
	•	1 sheet puff pastry
	•	Pinch of salt
	•	Optional: cinnamon or vanilla

Method
	1.	Preheat your BBQ for indirect heat (180°C / 350°F).
	2.	Place a cast iron pan on the grill and melt butter + sugar.
	3.	Let it cook into a golden caramel (don’t stir too much).
	4.	Add apples (cut side down) and let them caramelize for 10–15 min.
	5.	Sprinkle a pinch of salt (and optional cinnamon/vanilla).
	6.	Cover with puff pastry, tuck in the edges.
	7.	Close the lid and bake for 20–25 min until golden.
	8.	Let it rest 5 minutes… then flip carefully.

That moment when you lift the pan and reveal that glossy caramel top… 🔥

Serve warm. Maybe with vanilla ice cream if you’re feeling dangerous.
