Heerlijk Zacht Gerookte Look

Look is een essentieel ingrediënt bij veel gerechten.
Door de look te bereiden op de BBQ zal deze gaan ‘smelten’ of zacht worden, waardoor die uitknijpbaar wordt en dus makkelijker te mengen of uit te smeren is. Voeg wat kruiden naar smaak toe en je tilt het niveau van het ganse gerecht een trapje hoger.
De malse look is ook zachter van smaak waardoor je die makkelijk puur kan eten.
Probeer dit zeker eens bij gegrild vlees…
Benodigdheden:

  • 1 bol jonge look
  • 2 takjes tijn
  • 1 eetlepel Provençaalse kruiden
  • 1 eetlepel boter

Setup van de BBQ:Directe zone Grillen BBQ

  • Maak de barbecue klaar om direct te grillen op medium temperatuur van 160 – 180°C.

Bereidingswijze:

  1. Snij het kapje van de lookbol.
  2. Leg de boter op de lookbol, bestrooi met de provençaalse kruiden en tijm en zet het kapje terug op de lookbol.
  3. Wikkel de lookbol nu in aluminiufolie en zet direct boven de kolen voor zo’n 10-15 minuten. Of grill indirect voor 35 minuten of tot de look zacht is.
  4. Serveer bij het gerecht of knijp uit
  5. Smakelijk! 🙂

Tip:

  • Je hoeft geen aluminiumfolie gebruiken. Zet de look indirect, weg van de kolen, en gooi wat rooksnippers op het vuur. Wanneer de look zacht is, is ie klaar.

This recipe comes from the lovely @fosterfeasts and it's da bomb 💣💥.

Cut the pork belly in 2 inch pieces and put a skewer in them. Rubbed them with The Incredible rub, containing ginger and laurel.

Smoked pork belly at low temp and finished with some @blueshogsnation sauce.  I used @jackdaniels Honey to spritz the pork belly during the cook.

The result doesn't look as good as @fosterfeasts, but trust me is tastes amazing.

Cut the pineapple lengthwise and make some incisions. Take a Snickers and crumble it over the pineapple.⁣

Let it grill for about 20 minutes and portion it to serve. You can finish it with some almond flakes. ⁣

Smoking cauliflowers is easy to do. Remove the stems
 and drizzle with olive oil and smoke it till tender.

But this Dukkah mix is amazing. 
All you need for this is:
Parmesan, Butter, Walnuts, Almonds (hazelnuts are more commonly used), Sesame seeds, Coriander, Cumin, Salt, Freshly ground black pepper, all well mixed and ground.

Cover the cauliflower with this buttermix and smoke till its tender. Delicious!

Seared this beautiful duckbreast direct over de coals to let the fat melt in the coals. This gives a great smokey flavor.⁣

Beef jerky is not that popular in Europe. That's why I always get some when I'm in the States.⁣

I like it the most, cut against the grain to get some pull, but not too much. These I marinaded with the Marinade-in-a-bag by JL Kraft. Normally you can use them to marinate a steak before cooking. Well I can tell you they work perfectly for Beef Jerky too.⁣
