Smoked Deviled Eggs à la Steven Raichlen

Op oudejaarsavond hebben we de traditie om met vrienden samen te barbecuën. En dan maken we het erg feestelijk. Met Koolvis gestoomd in bananenblad, een gerookte kalkoen, … maar natuurlijk zijn er ook de aperohapjes zoals Atomic Buffalo Turds en Gerookte knolseldersoep. Vorig jaar viel mijn oog op de Deviled Smoked Eggs van Steven Raichlen.
Omdat dit recept zo makkelijk op voorhand te maken is en omdat je maar een handvol ingrediënten nodig hebt, past dit volledig in de filosofie van de blog ‘snelle en eenvoudige gerechten maken’.
Pas op, want deze Deviled Smoked Eggs zullen enorm in de smaak vallen. Maak er dus zeker wat meer zodat je gasten niet op hun honger moeten blijven zitten.

Benodigdheden voor 4 personen:

  • 4 eieren
  • 50 gram mayonaise
  • 1 eetlepel mosterd
  • 1 theelepel tabascosaus, Sriracha of een andere pikante saus naar keuze
  • 1 theelepel Worcestershire saus
  • 1 lente-uitje
  • peper en zout
  • rookchips

Setup van de BBQ:logo indirecte zone

  • Maak de BBQ klaar om indirect te grillen op lage temperatuur van 125°C

Bereidingswijze:

  1. Kook de eieren hard: leg de eieren in het water in een pot en breng nu het water aan de kook. Wanneer het water kookt zet je de timer op 10 minuten.
  2. Haal de eieren uit het warm water en leg ze in ijskoud water om af te koelen, zodat ze niet meer verder garen.
  3. Pel de eieren wanneer ze volledig afgekoeld zijn en leg ze nu op de BBQ om te roken gedurende 10 – 15 minuten tot ze goud-bruin zien. Gooi uiteraard de rookchips op de kolen.
  4. Na het roken, snij je de eieren in de lengte door en haal je voorzichtig het eigeel eruit en prak het eigeel met een vork.
  5. Meng nu het eigeel met de mayonaise, mosterd, Tabasco/Sriracha, Worcestershire saus en peper en zout.
  6. Doe het mengsel in een spuitzak en vul de eieren opnieuw op.
  7. Werk af met wat fijngesneden lente-ui, snippers zalm of andere ingrediënten.
  8. Smakelijk!

🥓 Perfect Grilled bacon slabs

Ingredients

* Thick-cut pork belly slices
* Salt & pepper or your favorite BBQ rub
* Optional: honey or mustard glaze

Method

1. Preheat BBQ to medium indirect heat.
2. Season generously.
3. Grill indirect for 15–20 min to render the fat.
4. Move to direct heat and grill until crispy on both sides.
5. Optional: glaze lightly and let it caramelize.
6. Rest briefly… then slice or serve whole.

Crispy outside. Juicy inside.

Tarte Tatin on the BBQ is pure magic. Sweet, smoky, and just a little bit rebellious.

🍎 BBQ Tarte Tatin (Cast Iron Method)

Ingredients
	•	4–5 apples (Elstar or Granny Smith), peeled & halved
	•	100 g sugar
	•	50 g butter
	•	1 sheet puff pastry
	•	Pinch of salt
	•	Optional: cinnamon or vanilla

Method
	1.	Preheat your BBQ for indirect heat (180°C / 350°F).
	2.	Place a cast iron pan on the grill and melt butter + sugar.
	3.	Let it cook into a golden caramel (don’t stir too much).
	4.	Add apples (cut side down) and let them caramelize for 10–15 min.
	5.	Sprinkle a pinch of salt (and optional cinnamon/vanilla).
	6.	Cover with puff pastry, tuck in the edges.
	7.	Close the lid and bake for 20–25 min until golden.
	8.	Let it rest 5 minutes… then flip carefully.

That moment when you lift the pan and reveal that glossy caramel top… 🔥

Serve warm. Maybe with vanilla ice cream if you’re feeling dangerous.
