Sint Jacobsvruchten met Lookbotersaus op de Yakiniku

Met de feestdagen voor de deur, schreeuwt de Sint Jacobsvrucht echt klasse en feest uit. Dit kleine delicate weekdier heeft niet veel nodig qua baktijd, maar met een klein beetje kruiding maak je er een overheerlijk gerecht van.
Maak er een tapa, voorgerecht of hoofdgerecht mee, scoren zal je altijd met deze Sint Jacobsvrucht.

Wil je helemaal feestelijk los gaan kunnen de reuze garnalen op cederhout, Sint-Jacobsvruchten op cederhout, lobster tails, kreeftenstaart met kruidenmarinade, foie gras op peperkoek of de feestelijke kreeft je zeker helpen.

Benodigdheden voor 4 personen:

  • 8 Sint Jacobsvruchten
  • 45 gr grof zout
  • 250 ml lauw water
  • zout en peper
  • 1 eetlepel olijfolie
  • 3 eetlepels boter
  • 3 teentjes knoflook, fijngesneden
  • 1 theelepel oregano
  • 1 theelepel rozemarijn
  • 1 theelepel tijm
  • 1 eetlepel peterselie
  • 1 citroen in dunne schijfjes

Setup van de BBQ:Directe zone Grillen BBQ

  • Maak de barbecue klaar om direct te grillen op medium hoge temperatuur van 200°C.

Bereidingswijze:

  1. Doe het lauw water in een kom en laat daarin het zout oplossen. Voeg daarna wat ijs toe om het water te laten afkoelen.
  2. Als het water afgekoeld is doe je de Sint Jacobsvruchten in het water en pekel je ze zo’n 10 – 15 minuten.
  3. Giet het water af, spoel de Sint Jacobsvruchten af met koud water en dep ze droog met keukenpapier.
  4. Zet een vuurvaste schotel direct boven de kolen en doe er olie in, evenals de boter en de knoflook.
  5. Bak nu de Sint Jacobsvruchten tot ze net niet meer glazig zijn. Zorg ervoor dat de BBQ en de schotel heel warm zijn hiervoor.
  6. Na 2 -3 minuten voeg je de kruiden toe en roer je alles goed door elkaar.
  7. Serveer in een kommetje en overgiet de Sint Jacobsvrucht rijkelijk met de lookboter, wat peterselie en met een schijfje citroen
  8. Smakelijk!

A thick côte à l’os deserves the reverse sear treatment. Gently bring the meat up to temperature, then finish it over  scorching hot grates for that deep, caramelized crust.

You’ll need: 
* 1 Côte à l’Os (1–1.2 kg) 
* Coarse sea salt 
* Freshly cracked black pepper

1️⃣ Preheat your  gasbarbecue for indirect cooking at 120°C (250°F).
