Meloen Feta Salade à la Ottolenghi

Salades zijn een essentieel deel van een BBQ. En de smaken laten kloppen met het hoofdgerecht is geen sinecure.
Regelmatig mag ik ook bij vrienden op de BBQ gaan en krijg ik heerlijke dingen voorgeschoteld. Zo ontdekte ik ook dit veggie slaatje van Yotam Ottolenghi.
Yotam Ottolenghi, heeft onder meer enkele afhaalzaken en een restaurant rond Londen. Met Mediterane achtergrond weet hij steeds te verrassen met simpele gerechten met uitgesproken frisse smaken. Zelf is hij geen vegetariër maar de meeste van zijn gerechten zijn wel degelijk vegetarisch.
Na het eten van deze salade was mijn interessen onmiddellijk gewekt en ben ik beginnen neuzen in de kookboeken die David en Magda thuis liggen hadden: Plenty en Plente More.
Benodigheden voor 4 personen:

  • 1 watermeloen van 700 gr
  • 1 rode ui
  • 280 gr feta kaas
  • handvol basilicum bladen
  • 1 eetlepel olijfolie

Bereidingswijze:

  1. Snij de rode ui in fijne plakjes
  2. Verbrokkel de feta kaas of snij deze in fijne blokjes
  3. Versnij de meloen in blokjes of partjes
  4. Mix alle ingrediënten samen met de olijfolie
  5. Smakelijk!
