Zeeduivel met Ham op een Spiesje van Rozemarijn à la Kurt Dekoninck

Als fervent BBQ’er ontvang ik graag gasten thuis. Dan maak ik graag gerechten waarbij ik het mezelf makkelijk kan maken. Niet veel ingrediënten, niet veel handelingen.
Wel, met het boek BBQ tapas van Kurt Dekoninck zit je helemaal goed. Leuke en makkelijk te maken tapas waarmee je je gasten kan verbazen. Dit boek is zeker een aanrader en daarom wil ik je dit receptje niet onthouden (Helaas is het boek al uitverkocht maar Rendez rond de BBQ is wel nog te verkrijgen en is evenzeer een aanrader!)
Benodigdheden voor 4 personen:

  • 150 gr zeeduivel of lotte
  • 2 plakjes gekookte ham
  • 4 rozemarijn takjes
  • 5 roze peperbollen
  • 1/2 koffielepel zout
  • olijfolie

Setup van de BBQ:Directe zone Grillen BBQ

  • Maak de barbecue klaar om direct te grillen op medium hoge temperatuur van 200°C

Bereidingswijze:

  1. Doe de rozemarijn van de takjes maar zorg dat er aan de top nog een ‘pluimpje’ overblijft.
  2. Hak de rozemarijnblaadjes fijn, plet de roze peperbollen en voeg zout en olijfolie toe.
  3. Laat de marinade enkele uren rusten.
  4. Snij de zeeduivel in blokjes van 3 op 3 cm.
  5. Wikkel wat ham rond het tweede blokje vis.
  6. Gebruik de rozemarijntakjes als spiesjes en steek er afwisselend een stukje vis en eentje met ham op.
  7. Bestrijk de vis met de marinade en grill ze ca 2 minuten direct boven de kolen.
  8. Smakelijk!

Every 20 minutes, brush the chicken with a tasty basting sauce. Mix olive oil, garlic, lemon juice, and your favorite herbs for an irresistible flavor boost.

Step 6️⃣: Check the temp 🌡️
After about 1.5-2 hours, use a meat thermometer to check the internal temperature. Aim for 165°F (74°C) in the thickest part of the meat. Adjust cooking time if needed.

Step 7️⃣: Rest and carve 🍽️
