Cuberdons met vers fruit op de Yakiniku

Mooi weer vraagt om de juiste maatregelen :). Daarom geven we jullie vandaag een zomers dessert. Vers fruit, Gentse cuberdons en voor de liefhebbers eventueel wat gin of jenever. Om af te werken kan je nog een bolletje vanille ijs gebruiken om het helemaal fris te maken.
Dit dessertje kan je makkelijk op voorhand maken en vraagt tevens weinig inspanning bij het bakken. Extra tijd voor jullie om dus van het mooie weer en het leuke gezelschap te genieten.
Een week geleden kreeg ik een leuk bericht van de mensen van Yakiniku Kamado Grills met de vraag of ik hun kamado wilde uitproberen. Tegen dergelijk voorstel zeg ik natuurlijk geen neen. Zodra de Yakiniku geleverd werd ben ik aan het experimenteren geslagen om de het toestel te leren kennen.
Dit recept was de ideale manier om de nieuwe Yakiniku Kamado uit te proberen. Gezien kamado’s helemaal anders werken qua temperatuur-regeling, vraagt het wel wat ervaring om alles op punt te krijgen. Vandaar dat ik begonnen ben met dit eenvoudig gerecht.
Benodigdheden voor 4 personen:

  • 4 nectarines
  • 4 appels
  • 3 limoenen
  • 300 g frambozen
  • 8 cuberdons

Setup van de BBQ:Directe zone Grillen BBQ

  • Maak de barbecue klaar om direct te grillen op medium temperatuur van 180 – 220°C.

Bereidings

  1. Snijd de nectarines en appels in partjes.
  2. Pers de limoenen uit en meng het sap met de partjes.
  3. Voeg de frambozen toe en verdeel het fruit over 4 papillottes.
  4. Snijd de cuberdons in 2 en voeg 4 stukjes per papillotte toe.
  5. Vouw de papillottes goed dicht.
  6. Plaats direct boven de kolen laat een kwartiertje garen. Serveer warm of lauw.

Tip:

  • Je kan eventueel opteren om dit fruitmengsel nog lichtjes overgieten met jenever of gin.
  • Werk af met een bolletje vanille ijs om het geheel op te frissen.

Layers of zucchini, eggplant and tomatoes, slowly roasted in a rich tomato sauce until perfectly tender, with just a hint of smoke from the grill. Simple ingredients transformed into something unforgettable.

šŸ”„ BBQ Ratatouille Recipe

You’ll need:

* 2 zucchini
* 2 eggplants
* 4 tomatoes
* 500 ml tomato passata
* 2 cloves garlic, minced
* 1 onion, finely diced
* 2 tbsp olive oil
* 1 tsp thyme
* 1 tsp rosemary
* Salt & black pepper
* Fresh basil

Method:

1ļøāƒ£ SautĆ© the onion and garlic in a cast-iron skillet with olive oil.

2ļøāƒ£ Stir in the tomato passata, thyme, rosemary, salt and pepper. Simmer for 10 minutes.

3ļøāƒ£ Thinly slice the zucchini, eggplants and tomatoes.

4ļøāƒ£ Arrange the vegetables upright in the skillet, alternating each slice to create a beautiful pattern.

5ļøāƒ£ Drizzle with olive oil and season lightly.

6ļøāƒ£ Place the skillet on the BBQ over indirect heat at 180°C (355°F) for 45–60 minutes, until the vegetables are tender and lightly caramelized.

7ļøāƒ£ Finish with fresh basil and a drizzle of extra virgin olive oil.

🦐 Grilled Shrimp on Zucchini Noodles

Ingredients
• 16 large shrimp, peeled & deveined
• 2 zucchinis, spiralized into noodles
• 2 tbsp olive oil
• 2 garlic cloves, minced
• Zest + juice of ½ lemon
• 1 tsp chili flakes (optional)
• Fresh parsley, chopped
• Salt & black pepper
• Freshly grated Parmesan (optional)

Method

1. Toss the shrimp with olive oil, garlic, lemon zest, salt, pepper, and chili flakes. Marinate for 15 minutes.
2. Grill the shrimp on the OFYR over high heat for 1–2 minutes per side until perfectly charred.
3. Lightly grill the zucchini noodles on the plancha for 1–2 minutes with a drizzle of olive oil—just enough to soften while keeping some bite.
4. Finish with lemon juice, fresh parsley, and Parmesan if desired.
5. Top the courgetini with the grilled shrimp and serve immediately.

āœ… Mix all the spices and coat the chicken thighs generously.Ā 
āœ… Place one pineapple slice on the bottom of the rotisserie, stack the chicken tightly, and finish with the second pineapple slice on top.Ā
