Konijn met biermarinade

Jullie kennen ze wel die gezellige herfstige zondagen bij vader en moeder aan tafel. Gezellig keuvelen aan tafel en daarna naar de koers kijken met een “taske koffie” en een “taartje”.
Vaak durfde het dan wel gebeuren dat “ons moeder” een lekkere stoofpot van konijn met bier op tafel toverde!
Wat kon ik daar vroeger van smullen aan tafel bij “la mama”.
Toen ik wat ouder werd en op eigen benen begon te staan, was hét moment aangebroken om een kruisbestuiving te maken van mijn oude, culinaire, nostalgische gevoelens en mijn hobby nl BBQ.
Benodigdheden voor 4 personen:

  • 1 konijn (in stukken gesneden)
  • 2 flesjes donkerbruin bier
  • peper en zout
  • 1 ajuin (in stukken gesneden)
  • 1 sjalot
  • tijm
  • laurierblaadjes
  • 2 eetlepels bruine suiker

Voorbereiding:

  1. Leg het konijn in diepe kom.
  2. Kruid af met peper en zout.
  3. Doe de ajuin, sjalot ,tijm, laurierblaadjes en 2 eetlepels bruine suiker erbij. Overgiet met bier tot het konijn helemaal onder het bier staat. Laat dan ongeveer 12u marineren in de frigo.

Bereidingswijze:

  1. Schroei de stukken konijn dicht op direct vuur tot deze mooi bruin zijn en een korstje hebben. ( vergeet niet dat konijn taai van structuur is dus dit mag gerust wat hebben ongeveer 15 min.)
  2. Leg daarna de stukken op een aluminium schaal naast de kolen en laat het konijn verder garen met het deksel dicht. Bevochtig logo indirecte zonehet konijn elke 20 minuten met de biermarinade om te voorkomen dat het vlees uitdroogt. Na ongeveer anderhalf uur garen is het konijn klaar om geserveerd te worden. Controleer het vlees op gaarheid door er met een mespunt in te prikken. Het moet gemakkelijk loslaten van het bot. Zorg dat de kerntemperatuur minstens 70°C bereikt heeft.
  3. De gekookte aardappeltjes worden uiteraard vervangen door “Potato Wedges“!!

The secret to a perfect steak?  Low temperature first, blazing heat after. 
A thick côte à l’os deserves the reverse sear treatment. Gently bring the meat up to temperature, then finish it over  scorching hot grates for that deep, caramelized crust. 
🔥 Reverse Seared Côte à l’Os Recipe 
You’ll need: 
* 1 Côte à l’Os (1–1.2 kg) 
* Coarse sea salt 
* Freshly cracked black pepper

Method: 
1️⃣ Preheat your  gasbarbecue for indirect cooking at 120°C (250°F). 
2️⃣ Generously season the steak generously with salt and pepper.

4️⃣ Remove the steak and increase the grill temperature to maximum heat.
