De Beurs & Barbecue: het beste van twee werelden

Twee zaken waar ik een mateloze interesse voor heb zijn de Beurs en Barbecue.
Nu stond vandaag op internet een artikel of column liever dat er zoiets bestaat als de Bloomberg Barbecue Index.
Een index dat de prijzen volgt van onder andere gemalen rundsvlees, tomaten, ijsbergsla, chips en ijscrème… Met andere woorden quasi alle ingrediënten die je nodig hebt om een hamburger klaar te maken en af te sluiten met een dessert…
Frappant is de evolutie van de index. Een vrij snel stijgende index vooral gedreven door de prijs van het vlees.

Je ziet dus dat je met barbecuen nog een goede investering kan doen …

Mist de juist beleggingsstrategie kan je dus dubbel genieten van een American BBQ op deze 4th of July. Want traditioneel is the 4the of July een dag waarop ‘alle’ Amerikanen barbecuën. En daarbij horen dus vooral grote stukken vlees en wat groentjes.

This is a feast! Bacon-wrapped venison 🦌 backstrap indirectly cooked on the kamado.⁣
⁣
For seasoning, I only used pepper, salt, and some rosemary on the backstrap. Then I wrapped it with bacon and cooked it at 105°C/220°f. This way the meat stayed really tender and juicy. At the end, I seared the backstrap in order to crisp up the bacon.⁣

To finish it, I made a nice mushroom creme sauce to make it more festive. 🎉

Take a look at it. This Iberico pork chop is from the @jamonbeher farm and is full of taste. Added some Incredible rub from @norubbish.nl and smoked it slowly and then seared it for the color. ⁣

I totally love burgers, and not long ago I discovered SMASH burgers. 

I just found out this is my new favorite way to make burgers... by smashing them... That way you can add two patties to your burger. That’s definitely a win!

This is a classic sidedish in States. We don't know it very well in Europe, so I had to try it! ⁣

Made this easy version of cornbread on my @weber_belux in an Iron Skillet. And I must say, I'm pretty happy with the result.⁣

Okay, you got me. I wasn't planning on doing these, but then again I got curious. 🤷‍♂️⁣

Given that I got @oreo's and bacon available, I said why not!?⁣
⁣
Slow-cooked the Oreo's 🍪 and bacon 🥓 for over an hour till the cream got really soft and the bacon 🥓 got crispy. The rest is history.⁣

In my personal opinion, not bad, glad I tried it. And btw, the secret is in the rub! Play with your rubs and you'll get different results every time!⁣

Wild Game season is one of my favorite seasons. The meat that is available is truly delicious. On the condition, you like it off course.⁣

This time I slow cooked a Venison Backstrap, wrapped in bacon. Why in bacon? Well, Venison backstrap is quite a lean meat, so by putting bacon on it, I added a layer of fat. Besides, who doesn't like bacon?⁣

I seasoned the meat first with salt, pepper, and garlic. That's it! ⁣

I could eat chickens wings 🐓 every day. Easy and fast to make.

These I made low&slow 🔥 after brining them in the Gold Brine of @devliegendehollanderbbqteam . At the very end I grilled them to give them a color and the sauced them really good with @blueshognation Tennessee Red.
