Seasoned this beef thenderloin with salt, peper and freshly cut rosemary. Wrapped the tenderloin with bacon and smoked it till medium rare.⁣

I just received my new Grill Grates from @premiumbbq.be ⁣
and off course wanted to try them.⁣
⁣
Luckily I had a Rubia Gallega Ribeye 🥩 from @meattheworldx in my fridge and some steak rub of @noskosbbq to season it.⁣
⁣
Let my coals come to +250°c to heat 🔥 the grates and then sear the steak 🥩... with these really beautiful grill marks as a result.⁣

@os_meatshop is a new online shop which sells their steaks online all across Europe, delivered within 24h! They also have a restaurant - butcher shop (@os.sinttruiden) for which they select only premium meat.

In order to get to know them, they send me these two amazing steaks:

🇯🇵 Japanse ITP Wagyu A5 Beef ribeye

This arrived in a cooled box, which was sealed airtight, and was accompanied with a personal thank you note from Chef Ben Elen himself.

I don't have to tell you how anxious I am to try these steaks...

I always reverse sear my Picanha. Smoking 💨 it first at 150°C and then grilling 🔥 it real hard! ⁣
⁣
As you see, the fat of the picanha melts and, once it hits the coals, flames come kissing the meat.⁣
⁣
And because of the fat, picanha i🥩 s one of my favorite ❤ steak. The taste is great and the kissing by flames 🔥 part is fantastic ⁣

I enjoyed this dish 🐷 a while ago and absolutely wanted to share it with you.⁣

It consists of a sweet macaroon, a slow smoked🔥 piece of pork 🐖 belly, a sour BBQ sauce and soms fresh herbs. This combination of flavors makes it just perfect! And original!

As an appetizer I love to serve my guests some grilled bruschetta. ⁣
⁣
I topped this grilled bread with some grilled tomatoes 🍅 and anchovies 🐟. Finished it with some fresh basil and olive oil.⁣
⁣
A sublime appetizer when waiting for you meal. And you can perfectly top with all the ingredients you and your guests like.⁣

🐗 𝐒𝐥𝐨𝐰 𝐒𝐦𝐨𝐤𝐞𝐝 𝐖𝐢𝐥𝐝 𝐁𝐨𝐚𝐫 🐗

Trying somthing new for the hunting season: Wild Boar 🐗!

I injected 💉 the boar with Game Changer Injection by @oakridgebbq Let it sit overnight. Rubbed the boar with @noskosbbq Pulled Pork rub and smoked it low & slow till 70°C.

Wrapped the board in foil with some game stock and let it go till 92°C. After letting it sit for half an hour it was time to pull the boar 🐗 and add some more stock and @traegergrillsnl apricot BBQ sauce.

Serve as a sandwich 🥪, on loaded nachos or tacos 🌮.

Mostly I prepare them in advance and once my guests arrive, I put them on my BBQ for 15 mins. Once the Cheese is golden brown, they are ready.⁣

A hot dog gone wild! We made this haute dog at a @weber_belux trainingday by @bloemenwim some while ago.⁣

We added some blue cheese 🧀, the famous Weber's Bacon 🥓 Jam and other delights.⁣

This brings a hot dog to whole other level: the Haute Dog!⁣
